Compose your email or reply, and tap on the  Send Later Icon (i.e. paper airplane with a clock).

Select Schedule Recurring Message at the bottom.

Customize the settings as needed:

Confirm the blue text below the setup options is accurate, and then tap Schedule to confirm. If you need to make changes, that can be done using the steps on this page.
